Chocolate Crunch Bites

Hey there everyone, I have another baking post to share with you guys. Hopefully I'm not boring you with all the food related stuff. Once the weather gets a bit nicer and we can get to work outside, I won't have any time to bake! I love to bake, so it's nice to get my fill while it's still chilly out.

This is another recipe that I thought was going to fail, but it came together and ended up being amazing. I am not a fan of these, too much peanut butter. But by the way they are being gobbled up by everyone else, they just have to be good. My parents even requested seconds, which is darn amazing if you know them.


Chocolate Crunch Bites (Company's Coming- Chocolate Everything, p.56)                         

1/2 cup smooth peanut butter                                1/4 cup dark corn syrup
1/2 cup plus 1 tbsp. rice cereal                              4 semi sweet baking squares

First you will want to mix the corn syrup and the peanut butter in a small bowl until well combined. Then add the 1/2 cup of rice cereal until a ball forms. Mine took an additional 1 tbsp. to form the ball, but don't use i unless you need it.



Next turn the mixture onto wax paper and shape it into a log roughly 1 1/2 inches in diameter and about 8 inches long.


Roll the log with the wax paper and wrap the ends with plastic wrap. Chill for about an hour or until the log is firm to the touch. Unwrap and cut into 1/4 inch slices. If you're like me, yours will range from 1/4 inch slices to 1/2 inch.


Melt the chocolate in a glass bowl over hot water until almost fully melted. Take off the heat and continue stirring until fully melted and shiny. Using a fork dip the slices into the chocolate and coat all sides. Making a complete mess of your fingers is optional of course.


Let the access chocolate drip off then place chocolate covered bites on wax paper. Once all bites are covered, chill for at least one hour until chocolate is set.


Then enjoy! Like I said, I'm not really a fan of these but if there was anything but peanut butter in them I would have eaten the entire batch. If that makes sense. I like chocolate.
