Happy Wednesday everyone! Hopefully everyone is having a great week so far, and was able to enjoy the beautiful weather we had last week. I think Braxton and I spent half of the week walking around the neighbourhood playing in the leaves. Back to the normal rainy and wet fall that we are used to, and this momma definitely needs to find some indoor toddler activities that Braxton will actually do.
But back the topic of this post. A few weeks ago I talked about trying some new recipes and I wanted to share an easy dinner go to that has little prep work involved. It can also be changed about a hundred different ways depending of the mood you are in.

Chicken Taquitos
Hey there, holy what a few weeks we have had over here. Braxton caught the flu, so we caught it as well. It was the first time he has really been sick, so it was a fun new experience. Nothing like your child waking up at 1am with a fever of 102 out of no where. Then he decided it was the perfect time to get two molars as well. Poor little guy was out of it for days. But everyone has recovered nicely and we are just getting back to normal.
But it did mean that I got absolutely nothing done for literally two weeks except snuggling and watching Braxton's favourite shows. I mean, I'm not going to complain because I love me some snuggles, but the house. Oh my the house was a disaster. We got everything under control in the last few days so hopefully I will be able to get some fun things done here for you guys (and for myself!).
I did want to share an easy dinner recipe that is great for when you do not have a ton of time to prepare or spend cooking, but you want more than Kraft dinner. It's for chicken taquitos, and only requires a few ingredients and about a half hour.

Cheaters "Homemade" Pizza
Happy Thursday everyone, hopefully you have a relaxing and fun weekend ahead of you. I don't know about you guys, but I find that I get super lazy in regards to making dinner on the weekend. I don't know why, but it's true. If we are going to order something, it's usually Friday or Saturday night. Pizza is usually a winner, but it's so greasy and we always feel so bloated afterwards.
Awhile back we found fresh pizza dough at our local grocery store. Being brave, I picked up a package and everything that I needed to make a pizza. It was life changing people, something everyone should try.

Tuna Noodle Casserole
Hey there all, hope everyone had a great New Year's! We went out for dinner with friends, then had a quiet night at home playing Mario Kart 8 on our Wii U. Nothing like Mario Kart to get your blood boiling!

Turkey Pie
Happy Friday everyone! It's t-minus 5 days and counting until Christmas, and I am still in disbelief that the year is almost over! Hopefully everyone has a lot of family time planned over the next few weeks.
If your Christmas gatherings are going to include turkey and lot of it, do I have a recipe for your leftovers. I found this recipe for turkey pot pie here and adapted it to what I can eat. This is a fantastic way to use up leftover turkey, and can be frozen to enjoy once you are no longer sick of turkey.

Meat & Cheese Lasagna
Happy Friday one and all, hopefully your week hasn't been too crazy. We are currently t-minus 23 days and counting until Christmas, you guys ready? Yeah, me neither.

Today I am sharing another soup recipe (I know!) that I started making a few years ago. Luis loves this soup, and as soon as the weather starts to get colder, he starts to ask for it. It's a very hearty soup with ingredients that you won't mind feeding yourself or your kids.

italian wedding soup
Hey there, today I wanted to share a new recipe I tried that I found on Pinterest. The Hubby loves Italian Wedding soup, but it's really hard for me to order because it has onions and/or garlic in it. So I thought I would give it a try, that way maybe we both could have some.
I found a recipe at Just a Pinch Recipes that seemed easy enough for a novice soup maker to handle. But of course, I had to change it up a little to account for the missing ingredients.
It didn't turn out quite as pretty as the original soup did, but it tasted pretty darn good.

beef barley soup
Hi there. Today I wanted to share with you a dinner I made that was so good! It was the first time I had made beef barley soup, and I think the second time ever that I had barley. So it ended up a win for me!

shepherd's pie
Howdy people.
I pinned a shepherd's pie a few weeks ago from Cambell's Kitchen. I know shepherd's pie is a pretty easy thing to make, but I thought I would try something different.
I made some changes to the recipe, like using real potatoes instead of instant. Instant potatoes freak me out - no idea why. They just do.
Cambell's Kitchen - Shepherd's Pie (with additions)
1 pound ground beef 1 medium onion, chopped (about 1/2 cup)
1 tbsp ketchup 1/8 tsp ground black pepper
1 cup frozen peas and carrots 1 cup milk
2 tbsp butter 4 lg potatoes, boiled & mashed
1 can Campbell's® Cream of Mushroom Soup
1 1/2 cups shredded Cheddar cheese (optional)
- Heat the oven to 400°F.
- Cook the beef and onion in a 10-inch skillet over medium-high heat until the beef is well browned, stirring to separate meat. Pour off any fat.
- Stir the soup, ketchup, black pepper and peas and carrots in the skillet. Spoon the beef mixture into a 9-inch pie plate.
- Stir 1/2 cup shredded cheese into already prepared mashed potatoes; Spoon over the beef mixture.
- Bake for 15 minutes or until the potatoes are lightly browned. Add remaining cheese to top of dish, bake 10 minutes. Broil until cheese is browned.
That's it. Serve and enjoy.
