Chocolate Dipped Brown Sugar Shortbread Cookies

Hello everyone,

Sorry for the late post, but the holiday bustle is upon us. Christmas is coming...(sorry, couldn't help myself).

I get regular emails from Kraft Canada that send anything from coupons, to baking tips to recipes. They sent me one last week just went I was searching for something to bake. Once I read the recipe and realized that I had all of the ingredients, I knew that I just had to bake them.


Chocolate-Dipped Brown Sugar Shortbread Cookies (Original recipe here)               

                      1/2 tsp salt
2 1/4 cups flour
1/2 pkg. Baker's Sweet Chocolate 

1. Heat oven to 325ºF.

2.  Beat/Mix butter, sugar and salt in large bowl with mixer until light and fluffy. Gradually add flour, mixing well after each addition. Pat or roll dough into 12x8-inch rectangle on parchment-covered baking sheet.  I used a 9x13-inch pan because that was all I had.

3. Cut into 8 lengthwise strips, then crosswise into 6 strips. Do not separate strips. Make sure that you really cut these strips, I did it lightly and once baked you couldn't even tell that they had been cut.

4. Bake 20 to 25 min. or until cookies are crisp and lightly browned. I reduced my baking time to 18 min and it was perfect. Cool on baking sheet 5 min and Remove to wire rack; cool completely.

5. Melt chocolate per package instructions and dip the corner of each cookie into it. Place on wax paper to dry.



I wasn't a huge fan of them, but Luis tells me the guys at his work devoured them. Though to be fair, I'm not a fan of shortbread unless its drowning in icing. Icing is like the cookie version of ketchup, and I love ketchup.
