Tuna Noodle Casserole

Hey there all, hope everyone had a great New Year's! We went out for dinner with friends, then had a quiet night at home playing Mario Kart 8 on our Wii U. Nothing like Mario Kart to get your blood boiling!

Today I want to share another recipe that is a regular in our menu plan, and as usual, it's pretty easy to make. I found the original here, but I have changed it to suit our tastes.




Tuna Noodle Casserole                                                                                 

2 cans tuna                                                              1 3/4 cups chicken broth
1 cup mushrooms                                                     3 tbsp flour
1 cup frozen peas                                                     4 tbsp breadcrumbs
1 cup milk                                                                1 tbsp butter
3/4 cup marble cheese                                              4 tbsp Parmesan cheese
2 1/2 cups egg noodles                                             

1. Preheat oven to 375 degrees. Lightly spray 9x13 casserole dish.

2. Cook noodles as directed until al dente, or slightly undercooked by 2 min. Set aside.

3. Melt butter; add flour and stir well 2-3 min on medium-low heat. Slowly whisk in the chicken broth until well combined, increasing heat to medium. Slowly add milk and bring to a boil. When boiling, add mushrooms and peas. Simmer until mixture thickens, stirring occasionally; Add drained tuna.

4. Remove from heat, add cheese and mix until melted. Add noodles to the sauce and mix well. Pour into dish and top with Parmesan cheese and breadcrumbs; spray lightly with cooking spray.

5. Bake 20 to 25 min.

Sometimes we add chow mien noodles to the top as well, but I am not as big a fan of those as Luis is. But if we have them, I'll add them for him.
