Today I want to share another cookie recipe that I usually make around the holidays, but it had been a few years since I had made them. I don't know why, because they are actually pretty amazing little cookies. They are the perfect combination of sweet and almost spicy.
Cardamom Snaps
3/4 cup shortening 1 tsp cinnamon
1 cup brown sugar 1/4 cup molasses
1 tsp baking soda 1 egg
2 tsp cardamom 2 1/4 cups flour
1/4 cup sugar
1. Preheat oven to 350 degrees; Beat shortening for 30 seconds.
Add brown sugar, baking soda, 1 1/2 tsp cardamom and cinnamon. Mix until combined.
Add molasses and egg. Mix until combined.
Next add the flour, mixing until just combined.
Once combined, this is what your dough will look like. It looks really dry, but once you play with it a little it is actually quite moist. And a note, it will smell amazing!!
2. Next add the 1/4 cup of sugar to a small bowl and add the remaining cardamom. Mix this up well. Shape the dough into one-inch balls and roll in the sugar mixture.
Place on parchment lined baking sheet about 1 inch apart.
3. Bake for 10 minutes or until edges are set and tops are slightly cracked. Do not over bake or these cookies will be tough as nails the next day.
They are great on their own, or with a glass of tea or coffee. Luis brought these to the guys at work, and apparently they are great if you just pop them right into your coffee mug!
