Chocolate Coconut Bars?....No Chocolate Coconut Balls.

Hello, hello. Welcome back! I'm not sure if you guys saw my Pi day fail, but I also tried another recipe that day too. It was a day of almost double failure, but at the last minute I was able to salvage this recipe and make it even better.

The original recipe was for coconut cream bars using only four ingredients. I tweaked it a little bit because it was a huge batch. Maybe that was the source of my failure, maybe not. I will show you my failure while I share the recipe, so follow through until the end to see how it all pans out.



Chocolate Coconut Balls                                                                                 

1 2/3 cups shredded coconut (roughly 440g)
1 1/4 cups sweetened condensed milk (roughly 400g)
1 cup powdered sugar
1 tsp. almond flavouring
2 boxes semi sweet chocolate baking squares

Stir the sugar, coconut, sweetened condensed milk and almond flavouring in a bowl until well combined.


Press into a greased 8x8 baking dish. I was silly and followed the original recipe by using a 9x13 dish. I ended up having a huge space leftover where I could not spread the mixture. Failure #1.



Freeze for 1 hour or until firm enough to cut. After you determine the mixture is thoroughly firm, melt your chocolate over hot water in a glass bowl. Let cool slightly, but continue stirring to make sure that it stays liquid.



This is where failure #2 occurred, as I could not cut this after being frozen for 2 hours nor could I get it off the dish (even though it was greased). Then I could not for the life of me get the "bars" coated in chocolate. As soon as I tried to dip a "bar", it fell apart.



I ended up dipping the bottom of my "bar" and then pouring the chocolate over top. Let's just say I went through almost half of the chocolate doing those few bars in the above picture. 

 
I called this a failed recipe and decided to drop the remaining coconut mixture into the melted chocolate. 

Once it all came together I rolled the concoction into balls and put them in the fridge overnight.



Magic happened in my fridge that night. I'm not sure if I have elves or something living in my leftovers, but holy man were these amazing. They tasted almost like a chocolate haystack but had the texture of a truffle. Make these at your own risk! I m not responsible if you eat the entire batch in one sitting, then lick the plate clean.

So if you are feeling like you need to punish yourself with chocolate, these are the ticket to doing so. I will make these again when I have to bring them somewhere far away.
