Hello everyone and happy Friday! Another week has gone by, and it's been a week where I feel like I haven't gotten anything done. Of course that's not true, what with a toddler, four animals and a mountain of housework everyday. But project wise, not a lot to be had.
I do have a really cute recipe to share with you guys today though, it's from Dessert for Two. I mentioned forever ago that Luis loves carrot cake here, but I hate making a whole cake or batch of cupcakes because most of it gets thrown away. His birthday just passed and I wanted to make him carrot cake, so this was perfect. Enough cake for just the two of us, because you can't not have cake on your birthday.
I did not have a 6-inch cake pan, but I did have a small loaf pan. Sometimes you just have to use what you have and hope for the best. I had to adjust the baking time to 30 minutes, and this left a moist cake with crispy edges.
I also used my veggie peeler to get some carrot for garnish, as well as garnishing with walnuts. Luis loves walnuts, so they were in the cake and on it as well.
It turned out pretty good, though we found the cream cheese icing to be a little sweet. But still very good. And per the instructions, the cake is even better the next day. Oh boy was our second serving so much better than the first one.
The fridge did magical things to the carrot cake overnight. Yum. And this recipe actually made quite a bit of cake. We could probably have fed six or more people with the cake I made. Or you know, I could just hoard it an eat cake for the next week....sounds like a plan.
Does anyone else hate making huge portions of food and having to throw most of it away? I will definitely be checking for more recipes that will serve just a few people.
