I made some banana bread this weekend and I got to say, it was pretty yummy. It's a great way to use up over ripe bananas.
If you don't have time to make the banana bread right away, just throw them in the freezer until you do.

Banana Bread:
1 egg, beaten
2 tbsp. melted butter
1 tsp. baking soda
1 1/2 cups flour
2 tsp. vanilla
1 cup sugar
1/2 tsp. salt
4 bananas
1/2 cup walnuts (optional)
1. Mix all wet ingredients; add dry ingredients and mix well.
2. Bake at 350 degrees for 1 hour
**Note: this recipes doubles very well; I usually do a double batch.
My husband just loves banana bread; it does not last long in our house.
